1/2 cup freshly squeezed lemon juice (3 lemons)

1 tbsp dried oregano 

1 tbsp sea salt

Heat oven to 410F. 

Mix together all ingredients together in a bowl and then transfer to a baking dish; large enough that the potatoes are in a single layer.  Bake for 20 minutes, then turn potatoes to ensure browning on both sides.  If there isn’t any liquid in the pan you can add water.
