Granola is a staple in our house. It’s what I usually have for breakfast with some hemp milk and my partner loves snacking on it. Sometimes when I feel like I really need a treat I will melt some dark chocolate and then add some granola to make a yummy chocolate bar! Besides being super easy to make its also a great recipe to add some herbal powders to giving it that extra heathly boost.
MIX IN A BOWL:
3 cups of Oats (GF if needed)
1/2 cup coconut flakes
1 cup nuts- almonds, pecans, walnuts, cashews
1 cup seeds- pumpkin, sunflower
1/4 cup dried fruit- cranberry, raisins
1/2 tsp salt
1 tbsp cinnamon
1 tbsp cacao powder
Optional: I usually add in 1 tsp of each of the following herb powders; ashwagandha, astragalus, holy basil, hawthorn, rosehip
MELT IN A POT ON LOW HEAT:
1/4 cup coconut oil
1/3 cup + 2tbsp honey or maple syrup
Heat oven to 340F.
Once the liquid in the pot has melted, add it to the dry ingredients bowl. Mix well so all the oats are moist. Then put the mixture on a cookie sheet. Cook in oven for about 10 minutes. Take it out and stir it around on the cookie sheet. Cook for another 5-8 minutes. Keep an eye on it so it doesn’t burn, this can happen quickly!
