There are delicious muffins that you can have for breakfast or a snack.  Blueberries are my fave fruit so I love that this recipes has lots of blueberries!

 

RECIPE

MIX WET INGREDIENTS:

5 eggs

3/4 cup apple sauce

1/4 cup honey

1/4 tsp vanilla extract

MIX IN DRY INGREDIENTS:

1 cup coconut flakes

1/2 cup coconut flour

1/4 cup flax meal

1/2 tsp baking powder

1/2 tsp sea salt

1 tsp cinnamon

Optional: You could add in 1 tsp of each of the following herb powders; ashwagandha or astragalus.

Combine wet and dry ingredients.  Then add in 1 1/2 cups of blueberries.

Heat oven to 350F. Bake for 30 minutes.
