These cookies are so good!  They are definitely my go-to when I want a cookie; soft, chewy and delicious.  

 

RECIPE

1/2 cup solidifed coconut oil (do not melt) 

1 cup coconut sugar OR organic brown sugar OR 3/4 cup honey 

6 tbsp blackstrap molasses 

4 tbsp almond milk (can substitute with any kind of milk)

1 tbsp vanilla extract

Mix together with a beater.  The add in:

DRY INGREDIENTS:

2 cups almond flour

2 cups oat flour

2 tsp baking soda

2 tsp baking powder

1/2 tsp sea salt

1 tsp cinnamon

2 tsp ground ginger

Optional: You can add in chopped crystalized ginger or mini chocolate chips; make sure they are dairy free or gluten free if needed.

Put a spoon full of batter on a cookie sheet. 

Heat oven to 350F. Bake for 10 minutes.
